Collagen Protein Bars

Ingredients:

1 cup collagen powder

1 cup rolled oats

1/2 cup almond butter

1/4 cup honey or maple syrup

1/2 cup dried fruit (such as chopped dates, raisins, or cranberries)

Optional: nuts, seeds, chocolate chips, or coconut flakes for additional texture and flavour

Method:

  • In a large mixing bowl, combine the collagen powder and rolled oats.
  • Add the almond butter and honey (or maple syrup) to the bowl. Stir until all ingredients are well combined and form a sticky dough-like consistency.
  • Fold in the dried fruit (and any optional nuts, seeds, chocolate chips, or coconut flakes) until evenly distributed throughout the dough.
  • Line a baking dish or pan with parchment paper or plastic wrap for easy removal of the protein bars.
  • Transfer the mixture to the prepared baking dish and press it down firmly and evenly into the bottom of the dish to form a flat layer.
  • Place the baking dish in the refrigerator and chill the mixture for at least 1-2 hours, or until firm and set.
  • Once the mixture has hardened, remove it from the refrigerator and lift the protein bar slab out of the baking dish using the parchment paper or plastic wrap.Use a sharp knife to cut the slab into individual protein bars of your desired size and shape.Store the collagen protein bars in an airtight container in the refrigerator for up to one week, or individually wrap them in plastic wrap or parchment paper for a convenient grab-and-go snack option.
