Easter Lunch: Rosemary and Lemon Roast Lamb

This roast lamb recipe is poised to be the star of your holiday dinner. If the idea of roasting a shoulder seems daunting, don't worry: it's just as easy (if not easier) than roasting a chicken. All you need to do is coat your roast with a mixture of garlic, rosemary, lemon zest, and oil, then let it roast in the oven for about an hour. Voila! You'll have a stunning centerpiece for your Easter lunch that's guaranteed to impress your guests.

 Ingredients

1 lamb leg boned
3 garlic cloves minced
1 tbs fresh rosemary
1 lemons sliced zested
3 tbs oil

Method

Mix together garlic, rosemary, lemon zest and oil. Spoon over lamb and season.
    Place lemon slices in baking tray and lay lamb on top. Allow to sit for at least 20 minutes before roasting.
      Cook for approximately 1½ hours in a 200C oven, depending on weight.
        Cover with foil and allow to rest for 15-20 minutes before carving.
